1-1/2 lbs. potatoes, peeled
1 cup mayonnaise
1/2 cup milk
8 tbsp, grated parmesan cheese, divided
1/4 cup chopped chives (optional–not used in the picture above)
1/2 tsp. cracked black pepper
Preheat oven to 350 degrees. Cover potatoes with cold water and bring to a boil over high heat in 3-quart saucepan. Reduce heat to low and simmer uncovered 15 minutes or until potatoes are fork-tender. Drain and cool. Thinly slice potatoes and arrange in 13 x 9-in baking dish; set aside. Combine mayonnaise, milk, 6 tbsp. cheese, chives and pepper in medium bowl. Evenly spoon mixture over potatoes. Top with remaining 2 tbsp. cheese. Bake 25 minutes or until golden brown and bubbling.
