Recipe: Creamy Chicken Pesto Linguine



12 oz. linguine

4 chicken breast halves, skinned, boned

2 tbsp and 1/2 cup butter

1 tbsp. and 1/2 cup pesto

1/2 cup heavy ceam

1/3 cup grated parmesan cheese


Cook pasta according to package directions. Rinse and drain. Return to pot. Cut chicken into bite-size pieces and cook in 2 tbsp. butter, stirring frequently. Remove and toss with 2 tbsp. pesto. In a small saucepan, heat the cream. Add the 1/2 cup butter and heat until melted. Gradually add the parmesan cheese, stirring after each addition until melted. Combine pasta, cream mixture and the 1/4 cup pesto. Spoon onto plate and top with chicken. 6 servings.
